She takes care of you all year long, so what better way to start off her special day than with a great breakfast? Whether you serve it to her in bed or on a beautifully set table, we've come up with some great Mother's Day breakfast recipes to make her day a memorable one.

First, make sure you know what Mom likes, or more importantly, what she doesn’t like. Some standard components to a good breakfast are things like fruit, eggs, dairy, bread, potatoes and meat. Our suggestion is to not go overboard on every item. Choose one or two things as the main dish, and go more basic with the rest.

FRUIT: If Mom likes strawberries you're in luck since they're in season, but there are many other options like blueberries, melon, bananas, citrus fruits… Fruit can be served as a parfait with yogurt and granola, as a garnish, or how about a smoothie?

Blueberry Smoothie: 1 cup frozen blueberries (no need to add ice), ½ banana, 1 cup plain or vanilla yogurt, 1 scoop chocolate whey protein, 2 cups apple juice. Blend.

EGGS: So many options. Quiche, omelet, poached. But one of our favorite ways to make eggs is in a cupcake tin. These not only taste great but they allow you time to make something else while you wait for them to bake.

With too many variations to list, we'll just give you the basic instructions. Preheat oven to 375. For a 12 cup muffin tin you’ll need 8 large eggs, beaten and seasoned. Decide what ingredients to add. Bacon or sausage (cooked) with shredded cheese, spinach and mushroom, asparagus and tomato, western style. The combinations are endless. Place your ingredients in the greased tin then pour the egg mixture on top. Bake for 30 minutes.

BREAD: If you’re going fancy on other items, you may want to just serve toast. But make it special by serving a thick slice of bakery bread with apple butter or a nice fruit preserve.

If you want bread as a main entrée, you could go with pancakes, waffles or . . . French toast. There are so many creative ways to make French toast. We recently tried banana bread French toast and it was amazing. You can use any kind of dense bread, thick slices work best. For 8 slices, you’ll need to whisk together 6 large eggs, 1-1/2 cup of milk or cream, 2 tbsp. vanilla extract, 1/2 tsp. cinnamon, pinch of salt, pinch of nutmeg. Soak each slice in egg mixture for 10 minutes. Heat 2 tbsp. of butter and 2 tbsp. vegetable oil in a skillet over medium heat. Fry slices until golden brown, 2 to 3 minutes per side. The fun part is choosing the topping. Go basic and sprinkle with powdered sugar, or spread Nutella and add sliced bananas, or go crazy and stack like a sandwich with Cannoli filling in the middle.

Mother's Day breakfast wouldn't be complete without a hot cup of coffee or tea. Give coffee some flair by adding a dollop of whipped cream and chocolate shavings. Maybe use a mint sprig or lemon wedge to garnish her tea.

Last but not least, serve Mom breakfast on the nice plates. Use cloth napkins. Make sure there's a flower or flowers in a vase. And most important . . . do all the clean-up. Happy Mother's Day!
